Honey Glazed Figs With Purple Haze Cheese & Candied Bacon Bits

Primary Ingredients

6 whole figs

3 tablespoon warm honey

3 strips bacon

3-4 oz. round of Purple Haze cheese 

1 tablespoon Dijon mustard

1 tablespoon white sugar

Primary Technique
  1. Preheat oven to 325°, bake strips of bacon until golden brown. Allow to cool, brush one side of the bacon with Dijon mustard and then heavily sprinkle with sugar to get a nice coating.
  2. Brulee the sugar with a kitchen torch until the sugar is a nice golden brown color. Allow sugared bacon to cool then chop into small pieces.
  3. Cut the figs in half lengthwise and layout on a small baking sheet. Brush lightly with warm honey.
  4. Stuff the middle of the fig with a teaspoon of cheese, then season with salt and pepper. Bake at 325° for 4-5 minutes. Sprinkle generously with the bacon pieces and serve.
