Blue Cheese Crostini with Toasted Almonds and Honey
15, ¹/2 -inch thick baguette slices cut diagonally
½ cup blanched sliced almonds
6-ounces blue cheese, such as Roquefort or Maytag
salt and black pepper
- Preheat oven to 375˚F.
- Place the baguette slices on a parchment-lined sheet pan and brush with olive oil and sprinkle with salt and black pepper; place in the preheated oven and cook until golden brown, about 8-10 minutes.
- Remove and let cool.
- Place the sliced almonds on a parchment-lined sheet pan and cook in preheated oven until lightly browned about 8-10 minutes; remove from oven and let cool.
- Evenly distribute the blue cheese over the toasted baguette slices and sprinkle the toasted almonds over the cheese. Lightly drizzle each baguette
- Slice with honey and serve.
