Chocolate Cherry Truffles

Pairs With:

2 cups heavy cream
3 ounces butter
3 ounces sugar
2 pounds bittersweet chocolate, chopped
¾ cup dried cherries, chopped
2 ounces St. Francis Port
Cocoa powder to coat truffles


Simmer cream, butter and sugar in a heavy sauce pan. Melt chocolate in double boiler. Combine chocolate and butter mixture in mixing bowl. Allow to cool slightly and stir in dried cherries and Port. Using a countertop mixer, paddle at medium speed until light, creamy and cool. Pour into storage container and refrigerate until solid. Use warmed melon ball scoop or butter scoop to scoop out small balls and roll in coco powder.
