Cocktail Ingredients
- 1 bottle (750 ml) 2025 St. Francis Sonoma County Rosé
- 16 oz fresh watermelon juice, pressed and strained
- 4 oz honey-basil simple syrup
- 4 oz fresh lime juice (about 4 limes)
- 1 tsp fleur de sel
- Garnish with strawberries, watermelon wedges, or fresh basil leaves
Cocktail Technique
- Combine watermelon juice, syrup, lime juice, and fleur de sel in a large pitcher and stir to combine
- Add the full bottle of Rosé and stir gently to preserve the wine’s texture
- Refrigerate until ready to serve — do not add ice to the pitcher
- Pour over ice into individual glasses and garnish each with a watermelon wedge and a fresh basil leaf
Honey-Basil Simple Syrup Ingredients
- 1 cup honey
- 1 cup water
- 6 fresh basil leaves
Honey-Basil Simple Syrup Technique
- Combine honey, water, and basil in a small saucepan over medium heat
- Simmer 5 minutes, then steep for 20 minutes off heat
- Strain and chill before using. Can be made 1 week ahead of time
