4 oz St. Francis Chardonnay
3 oz ginger beer
½ oz fresh lime juice (approximately ½ lime, squeezed)
Lime wedge for garnish
Ginger sugar for rim (1 cup granulated sugar, 2 oz candied ginger, finely chopped)
Combine sugar and candied ginger in an airtight container. Let it infuse for at least 24 hours before using. Stores indefinitely.
1. Rim Collins glass with ginger sugar
2. Fill the glass with ice
3. Add Chardonnay, ginger beer, and lime juice
4. Stir gently and garnish with a lime wedge
