Armagnac Prunes

Pairs With:

2 cups pitted prunes
2 cups sugar
2 cups water
½ vanilla bean split in half
Zest of one lemon
1 ½ cups Armagnac


Place the sugar, water, vanilla and lemon zest in a pot and bring to a boil stirring occasionally. Place the prunes in the pot and bring to a simmer, cook for three minutes at a simmer, remove from heat and let cool. When cool remove any excess syrup from the prunes, should be enough just to cover the prunes, and add the cognac to the prunes. Let soak up to 3 weeks.
