WINE CLUB : Appetizers : Quiche Lorraine

Quiche Lorraine

Paired with classic Quiche Lorraine, the smoky bacon and sweet leeks complement the rich deep flavors in the wine. Serves 8
Pairs With:

2 tablespoons butter
1 leek, washed and sliced
1 cup Gruyere cheese, grated
6 strips apple wood smoked bacon, cooked and crumbled
2 green onions, sliced
6 eggs
2 cups half and half
Salt and pepper to taste
1 9 -inch pre baked tart shell


Preheat oven to 375 degrees. In a large pan, heat butter over a medium-high flame. Cook the leeks, stirring a few minutes or until the leeks are soft. Place cooked leeks in bottom of tart shell. Place bacon on top, then cheese, then add green onions. Mix eggs with half and half and season to taste with salt and pepper. Pour egg mixture over the cheese and bake for 45 minutes or until the quiche has risen and is golden brown.
