Olive Oil Cake


Wet Ingredients:
¼ cup orange juice concentrate
3 whole eggs
1½ cups extra virgin olive oil
¼ cup brandy
1 ¼ cups whole milk
1 tablespoon lemon zest

Dry Ingredients:
2 cups sugar
2 cups flour
½ teaspoon baking soda
½ teaspoon baking powder
1 teaspoon salt


Mix the wet ingredients together with the paddle attachment in a stand up mixer.

Sift the dry ingredients together and add them to the wet ingredients, mix until smooth.

Grease a 9x11 inch non-stick baking pan with butter and pour in the cake batter.

Bake at 350°F for 20-25 minutes or until a toothpick inserted into the center comes out clean.
