CULINARY : St. Francis Wine & Food Pairing : Goat Cheese Polenta

Goat Cheese Polenta

Pairs With:

½ cup polenta
3 cups chicken stock or broth
½ cup heavy cream
1 tablespoon Italian parsley, chopped
1 tablespoon thyme, chopped
1 tablespoon chives, sliced
½ cup goat cheese
1 tablespoon butter
Salt and white pepper to taste


Bring the chicken stock and cream to boil in a medium sauce pot. Whisk in the polenta and reduce to a simmer, cover and cook 45-60 minutes over very low heat stirring frequently. If the polenta begins to dry out during cooking add more chicken stock or water. When the polenta is finished remove from heat and stir in the herbs, goat cheese and butter. Serve immediately.
