Smoked St. George Cheese with Red Onion Jam

Ingredients:

Red onion jam
4 red onions thinly sliced
½ bottle St. Francis red wine
1 cup sugar

Preparation:

Place all ingredients in a saucepot and simmer for 1 hour or until the wine has reduced to a syrup. Place a dollop of the red onion on slices of the smoked cheese.
