Rock Shrimp “Bouillabaisse” Crostini

Crostini

Ingredients:

24 slices sweet French bread baguette
High quality extra virgin olive oil

Preparation:

Preheat the oven to 350°F. Place bread slices on a cookie sheet and brush with olive oil. Bake for approximately 12 minutes or until lightly golden.

White Bean Purée

Ingredients:

1 12 ounce can cannellini or northern white beans
2 teaspoons minced garlic
Salt and pepper to taste

Preparation:

Purée the beans in a food processor with the garlic and season to taste.

Bouillabaisse

Ingredients:

½ pound rock shrimp, cleaned, cooked and chopped
2 tablespoons olive oil
1 green onion, minced
1 teaspoon garlic, minced
½ cup canned peeled roma tomato, drained, seeded and chopped
Pinch saffron
Salt and pepper to taste

Preparation:

Mix all ingredients together and season with salt and pepper to taste. Spread the white bean purée on the crostini. Place a teaspoon of the "Bouillabaisse" on top and serve.
