Point Reyes Blue Cheese is a sharp full-flavored blue that is softened with mascarpone. Another blue cheese may be substituted and cream cheese may replace the mascarpone. You may use fresh or prepared fig preserves. Use a sweet baguette instead of sour so the flavor does not adversely affect the wine.

Smoked Onion and Gruyere Cheese Tarts

You can use store bought puff pastry or another pastry of your choice. This recipe is for a standard 10-inch tart pan. You will want to make a lot of the smoked onions as they are great to have around for things like salad, pizza and pasta. I recommend pouring the St. Francis Cabernet with this dish because the crisp fruit of the wine balances the richness and deep flavors in the tart. I enjoy that tart with several of our red wines as well.

Wild and Domestic Mushroom Tart

Serves 8

The porcini mushrooms in this tart along with the roasted garlic gives a deep earthy flavor that accents the crisp fruit in the wine. You can use store bought puff pastry or another non-sweet pastry of your choice. This recipe is for a standard 10-inch tart pan. Serve with a tossed green salad for a light entrée.
